Country: Italy Languages: Italian & English Chef Paolo Monti is the Chef Patron of AMA Restaurant in Hong Kong and a forerunner of quality and authentic Italian Cuisine outside of Italy. He has been the culinary head of the Gaia Group for over two decades with his fresh and thoroughly modern style of Italian cooking. In these years he also co- founded the Italian Cuisine and Wine World Summit, the biggest event of its kind, putting together Michelin starred chefs from Italy with talented colleagues working abroad. He was born in Rome, which has been also the source of his classical training and experience. Not by chance he is widely known as the Amatricianist, from the Amatriciana, the most popular dish of Rome’s Region (the name AMA for his restaurants has the roots in the name of dish, but in Italian means also Love!). Paolo has worked at some of The Eternal City’s most renowned restaurants, including Alberto Ciarla, the famous seafood venue; the Michelin-star Eden Hotel, one of the capital’s most distinguished and historic hotels with a sublime terrace overlooking Via Veneto; and Checcoar 13 ‘mo, one of the oldest trattoria in Rome with seven years of experience.
